FOOD & BEVERAGE DIRECTOR (OPERATIONS) – DOMA Portugal
DOMA Portugal is looking for an experienced operator responsible for leading and managing three core areas of our F&B division — Restaurant, Bakery Café, and Catering/Events — ensuring smooth daily operations, consistent quality, and exceptional guest experiences.

- lined destination 30 minutes from Lisbon — a place to stay, gather, and create. The property includes around 35 rooms, a Café & Bakery, a restaurant, coworking studios, trails, and event spaces for up to 350 guests, along with a Steam Center.
We’re growing quickly and shaping DOMA into a truly unique destination — a space for people to connect, experience, and evolve.
Role Overview
As the Food & Beverage Director (Operations), you’ll lead DOMA’s entire F&B operation across three main components — Restaurant, Bakery Café, and Catering & Events. You’ll manage daily performance, ensure consistent standards, and build a strong, multicultural team that delivers memorable service every day.
Your role is both strategic and
- on — from floor management and quality control to cost management, team development, and coordination across departments.
Reports & Structure
- Reports to: CEO & COO
- Direct Reports: Head Chef, Head Baker, Beverage Director, Head Barista, Outlet Managers, Prep/Catering Chef, Stewarding/Stores
- Scope: Daily operations for Restaurant/Bistro, Café & Bakery, Prep/Catering, Room Service, Pool Bar, Steam Center, and Banquets
- Team: International with seasonal expansion
Key Responsibilities
1. Restaurant Operations- Lead daily service — reservations, table flow, pacing, and guest experience.
- Manage
- shifts, service coordination, and quality control for both FOH and BOH. - Monitor revenue levers (Rev
PASH, APC, pairing attach rate) and guest satisfaction. - Maintain consistency in standards, timing, and ambience.
- Oversee breakfast and brunch service with focus on speed, quality, and presentation.
- Support Head Baker and Head Barista in product quality, displays, and customer experience.
- Build regular local clientele through consistent routines and warm service.
- Oversee all catering and banqueting operations from planning to execution.
- Collaborate with the Events team to deliver smooth,
- time service for weddings, retreats, and private events. - Coordinate
- department logistics
- Hire, train, and mentor a multicultural F&B team.
- Build bilingual SOPs and provide clear, consistent communication.
- Create fair schedules and encourage growth and
- training.
- Enforce HACCP/ASAE, safety, and hygiene standards.
- Maintain cost efficiency — food cost %, pour cost %, labor %.
- Manage supplier relations, inventory, and procurement.
- Work closely with Rooms, Housekeeping, Engineering, Events, and Marketing.
- Lead daily
- ups and weekly operations meetings to align priorities. - Support marketing initiatives to promote DOMA’s F&B offerings.
Success Measures
- Guest satisfaction and consistent service quality.
- Restaurant and Bakery revenue growth and cost targets met.
- Strong team retention and engagement.
- Smooth coordination between F&B, Rooms, and Events teams.
- No major compliance or service issues.
Ideal Profile
- 5–8+ years of experience leading hotel or restaurant operations, ideally in the Lisbon/Mafra/Sintra area.
- Proven experience managing both à la carte restaurants and bakery or breakfast outlets.
- Skilled in managing multicultural
- fluent in Portuguese and English. - Strong understanding of cost control, scheduling, and operational forecasting.
- Hands-on leader who thrives in dynamic environments and treats each outlet as both a guest experience and a business driver.
