- on Food & Beverage Manager to lead our opening team and set the operational and service standards for one of the most anticipated hospitality launches in Portugal.
Position Overview
The Food & Beverage Manager will oversee all aspects of the food and beverage operation, including the
- pub, bar, and private dining areas. This role requires a leader with the perfect balance of strategic oversight, operational excellence, and team mentorship.
As this is a new opening, the F&B Manager will play a critical role during the first two to three quarters

Key Responsibilities
Operational Leadership
- Lead all aspects of daily F&B operations, ensuring excellence across every guest touchpoint.
- Work
- on during the opening period, ensuring seamless service and team alignment. - Establish and implement Heather Moors’ operational standards, procedures, and brand ethos.
- Collaborate closely with the culinary, service, and support teams to achieve consistency and perfection.
- Anticipate challenges and resolve issues swiftly to maintain an exceptional guest experience.
Team Management & Training
- Recruit, train, and mentor a
- performing F&B team, building a culture of pride, professionalism, and passion. - Design and implement Heather Moors Training & Service Excellence Programs to ensure consistent brand delivery.
- Foster a positive and motivating environment that encourages continuous learning and attention to detail.
- Lead by example, being present and involved across all service periods, especially during the first months of operation.
Guest Experience & Brand Representation
- Uphold the Heather Moors identity as a sophisticated, elegant, and welcoming venue rooted in British hospitality traditions.
- Ensure personalized service that reflects genuine care and anticipation of guest needs.
- Manage VIP guests and special requests with discretion and grace.
- Oversee guest feedback systems to maintain and improve satisfaction scores.
Financial & Strategic Management
- Develop, manage, and oversee F&B budgets, cost controls, and profitability targets.
- Monitor revenues, margins, and forecasts, identifying opportunities for improvement.
- Ensure accurate financial reporting, inventory management, and supplier relations.
- Collaborate with ownership and management to define pricing, menu strategy, and promotional initiatives.
- Maintain full accountability for P&L performance and
- term sustainability of the F&B department.
Compliance & Standards
- Ensure full adherence to Portuguese and EU food safety, health, and hygiene regulations.
- Establish and enforce detailed Standard Operating Procedures (SOPs) for all outlets.
- Oversee regular audits, risk assessments, and cleanliness checks.
- Ensure all staff are trained in safety, allergen awareness, and emergency protocols.
Strategic Development
- Support the General Manager and ownership in positioning Heather Moors as one of Portugal’s most prestigious venues.
- Continuously analyze market trends and guest insights to innovate and refine F&B concepts.
- Contribute to the development of brand standards and future expansion plans across other venues.
Candidate Profile
- Minimum 5–7 years of senior management experience within luxury or
- dining F&B environments. - Proven track record of success in Michelin-starred,
- Michelin, or boutique luxury venues within Europe. - Deep understanding of British hospitality culture and premium guest service standards.
- Strong financial acumen, business sense, and analytical ability.
- Hands-on, pragmatic leader capable of leading from the floor and inspiring excellence.
- Exceptional communication and interpersonal skills.
- Fluent English (C1 or native level) required; Portuguese or additional European languages are advantageous but not essential.
- Advanced user of Micros Oracle or equivalent POS platforms, with solid MS Office proficiency.
- Ability to thrive under pressure, especially in the
- opening and launch phases.
