About Us: We are launching a premium British Gastropub and brasserie in the heart of Cascais – one of Portugal’s most prestigious coastal destinations.
The concept celebrates the heritage of British cuisine, elevated with classical French techniques, executed with discipline, creativity, and uncompromising quality. The venue is fitted with
- class kitchen equipment and occupies a prime location in an upscale, highly competitive dining market. This is the first in a series of planned venues, making this opening a cornerstone of our future growth.
The Opportunity
We are seeking an experienced and ambitious Head Chef to take full ownership of the kitchen operation from
- opening through to launch and beyond. The right candidate will combine creative flair with strong commercial acumen, leading a team to deliver exceptional dining experiences while ensuring operational efficiency and profitability.
Key Responsibilities
- Menu Engineering: Develop seasonal menus that are both commercially viable and creatively distinctive.
- Cost Control: Maintain tight control over food costs, supplier negotiations, portioning, and waste reduction.
- Operational Leadership: Lead

- day kitchen operations with precision, ensuring the highest standards of consistency and presentation. - Team Management: Recruit, train, and mentor a motivated brigade, fostering a professional and disciplined kitchen culture.
- Health & Safety: Uphold HACCP and all relevant food safety regulations to exemplary standards.
- Pre-Opening Excellence: Set up systems, workflows, and operational structures ahead of launch.
- Collaboration: Work closely with ownership to ensure the culinary offer is fully aligned with the brand vision and market positioning.

Candidate Profile
- Proven track record as a Head Chef or strong Sous Chef in
- end gastropubs, brasseries, or fine dining. - In-depth knowledge of British cuisine with a solid grounding in classical French cookery.
- Demonstrated experience in menu engineering, GP management, and cost efficiency.
- Strong leadership, organisational, and communication skills.
- Flexible, humble, and adaptable, with the ability to thrive in a
- pressure, competitive market. - Experience in
- opening environments is an advantage. - Fluent English essential; Portuguese an asset.
- Eligible to work in Portugal or able to relocate with the appropriate permissions.
