As a
Sushiman 3ª,
you will be a key support member of the sushi team, dedicated to mastering the foundational skills necessary for a successful career. This role is perfect for an ambitious professional with a foundational understanding of sushi preparation and a strong desire to learn and grow within a luxury environment.
Key Responsibilities
- Mise en Place:
Execute precise and consistent daily prep tasks, including washing and preparing vegetables, slicing small ingredients, and ensuring all necessary components for the sushi bar are stocked and ready for service. - Rice Preparation:
Assist in the perfect cooking, seasoning, and handling of sushi rice (shari) according to the Head Chef's specifications. - Fish Handling:
Under the direct supervision of senior chefs, learn and assist with the cleaning, proper storage, and initial breakdown of fish and seafood, maintaining strict quality and freshness standards. - Sushi Assembly:
Accurately and consistently prepare basic maki rolls, hand rolls, and other
- specialty sushi items during service, focusing on presentation and speed. - Station Management:
Maintain a spotless, organized, and sanitary work area (the sushi bar and kitchen station) at all times, strictly adhering to all food safety and hygiene regulations.
Requirements and Qualifications
- Experience:
Previous experience (minimum 1-2 years) in a professional kitchen environment, with a demonstrable basic knowledge of sushi preparation techniques. - Skill Set:
Basic, yet solid, knife skills and a strong commitment to precision and detail in presentation. - Work Ethic:
High level of organization, diligence, and the ability to work efficiently and remain calm under pressure during busy service periods. - Personal Equipment:

Knowledge of food safety standards and proper fish handling procedures. A valid food handler's certificate is preferred. - Language:
Basic proficiency in Portuguese is required (English is a plus). - Attitude:
